Gooseberries are sorted, my and fall asleep in an enamel pot. Tightly close the lid and send it to bake in the oven, until soft. When the berry mass cools down, wipe it through a sieve, and then whisk the blender into a foam.

Sugar is brewed with water and cooked over a slow fire thick syrup. We pour it into the mashed potatoes and once again carefully beat. Cover the pan with parchment and grease with melted butter. On top, fill the fruit mixture, level with a knife and send it to the oven. Dry the pastille at minimum heat with the oven door open. After a couple of hours, the sheet is turned over. Pastila is ready, if it does not stick to the fingers. Cut it into pieces and sprinkle with powdered sugar. We store in dry, hermetically sealed cans.

For natural, sugar-free, pastilles choose only the ripeest berries. We rinse with cold running water and blanch in the steam sokovarke. When the gooseberry softens, still hot rub it through a sieve.
