Preserved jam from prunes

Jam is served as an independent dessert, as well as syrniki , pancakes, fritters and cottage cheese. Jam is often used as a filling for pies, patties and sweet pastries, as an ingredient for making confectionery.

Tasty and useful jam is obtained from prunes (this is one of the best sorts of plums).

My plums. We cut each sink into two mats and remove the stone. Wash the halves of the drains should not be, fill them with sugar in a working container (basin, bowl). Hours in 3-5, when the plum leaves juice, we will pour water. If plums are juicy, ripe, you can do without water. For better safety it will be useful to pour 100 ml of vodka into the jam, and preferably plum brandy, rum or gin. Gently stirring with a wooden spoon, bring to a boil on the lowest heat. Cook for 8 minutes, carefully taking off the foam. Cool the jam in a natural way. Again, bring the jam to a boil and cook for 5 minutes. The readiness of the jam is defined as follows: put a drop on the fingernail of the big finger, turn it over, if the drop does not fall, then it's ready. Otherwise, repeat the cycle.

We pour the jam into clean sterilized glass jars, roll it up, turn it over and cover it until it cools down. You can simply close the plastic covers. Some, to get a more refined taste, also add vanilla or cinnamon to the plum jam (just do not add these spices together, just one thing).

A jam of prunes with pits brews exactly the same as without pits. First remove the tails and carefully wash my plums. Boil at least 3 times.

Spicy jam with pumpkin and prunes

We cut the plums into halves and remove the bones. Pulp flesh we will cut with cubes approximate size 1х1х2 cm. All together we put in a basin and pour sugar. We wait for 3 hours minimum, while the plum and pumpkin will abundantly let out juice.

Bring to the boil on the lowest heat, cook for 8 minutes, using only a wooden spoon, remove the foam. Add spices. Cool, repeat the cycle at least 1 more time. We serve this delicious treat with fresh black tea or with muscat wine and dry crackers of neutral taste. You can also serve cheese.
