Eggplants are medium-sized, it's better to find white ones - their taste is much more delicate, but the violet ones are also delicious. We cut the fruit in circles, we choose the thickness depending on the diameter of the fruit: thicker cuts are thinner, thin can be shredded not very thinly. Now you need to soak the slices in slightly salted cold or lukewarm water. Put them in a suitable container, add water and salt, stir.

We have time while we soak the eggplant slices to cook the sauce. Tomatoes should be washed and turned with mashed potatoes using a meat grinder or blender, in the cauldron boil the resulting thick mass, adding salt, sugar and butter to it. When the sauce boils, we fix 10 minutes, pour in the vinegar, drain the water from the eggplants, rinse them and put them in the cauldron. Stew aubergines in sweet and sour sauce for about half an hour, after which add garlic, chopped greens and spices.

To get sharp eggplants in sweet and sour sauce, add crushed chili pepper (seeds, of course, remove) and increase the amount of garlic to taste.

If you want to add saturation to the taste of the dish and at the same time make the texture lighter, prepare eggplant with vegetables in sweet and sour sauce. Add the sweet pepper and zucchini, cut them into small strips. Extinguish everything together and get an unusually tasty dish.

It is possible to roll eggplants in sweet and sour sauce for this winter for this recipe. In advance, and sterilize the jars, lay out the eggplant circles in them, pour the sauce and close.

You can cook eggplants with zucchini in sweet and sour sauce, do not change the recipe. Just fry separately zucchini and alternate layers of eggplant, sauce and zucchini. It turns out an unusual dish, combining the delicate texture of fried vegetables and the sharpness of sweet and sour sauce.
