Zrazy with mushrooms - recipe

The name "zrazy" came to us from Polish cuisine. Previously, it was called small rolls, made from chopped meat with a variety of fillings, but then, gradually, meat pieces were replaced with minced meat. How to prepare zrazy with mushrooms? So, the potatoes are thoroughly rinsed, poured cold water and boiled until cooked. Onions are cleaned and crushed in cubes. Champignons are mine, dried and cut into small pieces. Finished boiled potatoes are peeled and kneaded in a mashed toast, adding chicken egg, salt and pepper to taste. Next, pour a little vegetable oil into the frying pan and fry the mushrooms with onions until golden brown for 15 minutes on low heat. Filling with salt, pepper and leave to cool. From the potato mass, we form a small flat cake, put a little stuffing in the center and tighten it tightly, giving it the shape of a cutlet.

We start preparing the sauce: for this mix sour cream, squeezed through the press garlic and finely chopped dill. Cutlets dip into a pre-beaten egg, crumble in breadcrumbs and fry in vegetable oil on both sides until a crusty brown. Onions are cleaned and, together with mushrooms, finely chopped, and then fry in vegetable oil until golden brown. One egg boiled hard, cleaned of shells and finely chopped. In a small bowl, mix mushrooms with onion, egg, chopped greens of dill and parsley, salt, pepper to taste and mix thoroughly. A piece of bread is soaked in milk and, after squeezing it well, we add it to minced meat along with the beaten eggs, mix everything to a homogeneous consistency. Chicken minced meat is divided into small cakes, in the center of each we put stuffing and zalepljayem edges. Chicken zrazy with mushrooms roll in breadcrumbs and fry from all sides until ready.

First we will make a stuffing: onions and mushrooms are cleaned, finely chopped and fried in a frying pan.

To the frying we add in advance cooked and finely chopped eggs. The filling is mixed thoroughly, salt and pepper. Now we are going to prepare the mince for the meals: put a slice of bread in the bowl, fill it with milk and leave it for 15 minutes. In another container we put out the minced meat, add the raw egg, the pressed bread, salt and pepper. We mix everything thoroughly to homogeneity and form small pellets with our hands. In the center of each cake we put the filling and splinter the edges, forming a cutlet. Formed zrazes we pour in flour and fry in a frying pan heated from the oil on both sides to ruddy.
