Leave spinach leaves until they curdle. Add 1/5 of the butter, a little pepper and salt. Cooled leaves are squeezed, finely chopped and mixed with Ricotta cheese.

Very thinly roll out the dough and place it on the board. Spoon spread the prepared filling at a distance of 4 cm from each other.

Dough around the filling slightly moistened with water and lay out on top of the second rolled out dough, press it with your fingers where there is no filling. Cut the dough into squares. Boil ravioli with cheese in salted boiling water, adding olive oil to it. Ravioli with cheese and spinach is served by watering melted butter.

The dough is made in accordance with the previous recipe. For the preparation of the filling fry 7-8 minutes mushrooms, we clean and grind garlic, add it to the mushrooms along with salt and pepper. Another 2 minutes we hold on fire, after which we let mushrooms cool. At this time, whisk "Ricotta" with a fork and, adding grated "Parmesan", mix. We connect mushrooms and cheese mass - the filling is ready.
