To prepare dandelion honey, you will have to wait until spring, when the fields are covered with mottled yellow flowers. In this case, collect dandelions should be only in certain places: away from the city, in the most pure areas. After collection, fresh flowers are prepared immediately, and the cooking scheme of this jam differs little from that adopted for delicacies on fruit or berry basis.

Before you can cook dandelion honey, you need to make a simple sugar syrup. To this end, the measured amount of sugar is poured a small portion of water and put on fire. Once all the sugar crystals have dissolved, and the syrup becomes transparent, cut dandelion buds are added to it and leave to boil for about 20 minutes. After the time has elapsed, the juice of the lemon is squeezed into the syrup in order to prevent subsequent thickening, and then leave to cool. Then the jam is poured over gauze, and the flowers are squeezed out properly. The resulting syrup is returned to the fire and cooked for 20 minutes. Ready honey remains poured in sterile containers and cooled.

How to prepare dandelion honey at home?

Honey from dandelions can become a substitute for ordinary honey for those who have excluded from the diet animal products. Diversify the base recipe can be interesting aromatic additives, like a vanilla pod, which we decided to put into the product prepared according to the recipe below.

First, take up the syrup. For its preparation, sugar must be poured in water and left on a low heat. After boiling, heat can be increased and leave the syrup cooked for another 5 minutes. In a bubbling syrup, put dandelion flowers and lower the heat. Leave the dandelions cook for about 20 minutes, add the sliced ​​vanilla pod, a strip of fragrant orange peel, and then squeeze out the lemon juice. At the end of cooking, remove the pot of honey from the fire and leave to cool for about a day, without forgetting to cover everything with a lid. After cooling, honey is filtered, again put on fire and cook for another 20 minutes, but this time with a weak boil.

Ready honey is poured over clean jars and cooled.

How to cook dandelion honey?

In this recipe, dandelion flowers will be added apples, the finished product will get even more delicious and aromatic.

Pour the washed flowers of dandelions and pieces of apples with water, add lemon juice. Leave everything to boil with a weak boil for about half an hour. After a while, strain the mixture through a gauze covered with a sieve and thoroughly wring out all. The resulting juice will have a rich yellow color. After, the juice can be weighed and add to it a similar mass of sugar. The mixture is returned to medium heat and cooked, achieving the desired density.
