How to cook squid with rice? So, first we defrost our squid, putting them for a few minutes in a bowl with warm water. Then, using a sharp knife, cut the carcass into smooth rings. Rice is filled with water and left for a while. Garlic and tomatoes finely chopped. In the saucepan pour a little olive oil, warm it, put the squid and cook on low heat for 10 minutes, stirring constantly. Next, add garlic, tomatoes, mushrooms and pour a little vegetable broth. We make fire quite weak, cover with a lid and stew for about 20 minutes. Then put the soaked rice and add the broth. All thoroughly salt, stir and cook on high heat with the lid closed for another 10 minutes. Before serving, sprinkle the finished dish with finely chopped greens.

For cooking rice with squid and mushrooms, we take with you small carcasses of squid, thoroughly rinsed under running water, put in a bowl and pour completely steep boiling water. Leave the minutes at 15, then gently remove the insides and chord, clean them from the film.
