Cottage cheese is mixed with candied red currants and rubbed through a sieve. In principle, red currants, rubbed with sugar, can easily be replaced by any other berry, prepared with sugar, or a rich fruit syrup, or a liquid tender jam. Add the egg, lemon juice, vanilla or cinnamon. Thoroughly mix.
