Lenten muffins

The variety of Lenten recipes in our time is not inferior to the variety of those dishes that are prepared with the use of animal products, and therefore during the fast to deprive oneself of favorite treats follows only on their own. Banana muffins - recipe

Among the most popular additives to the muffin test is a banana. Its pulp will give your favorite baking not only a stunning aroma and light sweetness, but will also allow you to tie all the components of the dough together without adding eggs.

First of all, we mix together all the dry ingredients - this is the first four in the list of constituents above. Add cinnamon and vanillin to the mixture. In terms of spices, you can give free rein and choose your favorite alternatives: ground cardamom, nutmeg, cloves and others will work perfectly. Take a ripe banana and turn it into mashed potatoes. Whisk the resulting puree with almond (or any vegetable) milk, add butter and pour honey. Combine the two prepared mixtures together, add crushed nuts (if desired) to them and spread the dough between the muffin shape cells. Send everything to bake at 200 degrees for 20 minutes.

Lenten muffins with berries

If you decide to prepare berry muffins, then it's better to postpone this idea until the season comes, because frozen fruit tends to give an unpleasant shade, coloring your pastries in unappetizing blue-green hues.

Before cooking, pour the freshly ground flax with 75 ml of warm water and leave to stand. Combine flour with soda and sugar, dilute vinegar in water. Water is also possible, and even desirable, replaced with vegetable milk, this will benefit both taste and texture. Then add the liquid to the dry mixture, pour in the swollen linseed and mix well. Add the berries and repeat the kneading. Distribute the dough in 12 cells of the baking dish and put everything in a preheated 180 degree oven for 20 minutes.

Carrot muffin with orange and pumpkin

For lovers of bright baking, we have prepared these muffins with carrots and pumpkins, which after baking acquire not only an attractive taste and aroma, but also a pleasant orange color.

Mix flour with spices and baking powder. Sugar whip with pumpkin puree butter and milk until the crystals completely dissolve. After peeling the carrots, finely chop it. Mix the dry ingredients with the pumpkin-milk mixture, add grated carrots, raisins, nuts and shavings. Divide the prepared mixture into 12 portions and bake at 200 degrees 18-20 minutes.
