Fried lamb with onion and celery

Stalk my celery, clean and cut into large cubes, which then should be filled with vegetable broth, sprinkled with fresh thyme, butter and put on fire. After the broth comes to a boil - reduce the fire, cover the pan with a lid and leave the celery stew for 15 minutes, until soft.

In the meantime, lamb roast is washed and dried, and then carefully seasoned with salt and pepper on both sides. If the meat has a specific, unpleasant smell - pre-soak it in a weak solution of vinegar for 1-1.5 hours.

Before frying mutton in a frying pan, the latter must be well heated with vegetable oil and only after laying pieces of meat, roasting that will take 5-7 minutes on each side. 2 minutes before the preparation in the pan, we put rings of red or lettuce onions and fry the meat with them to give the onion flavor. We serve quads with stewed celery and mashed potatoes.

In stainless cookware, mix all the herbs, salt, pepper and crushed garlic (lovers can add a few canned anchovies), pour the mixture with olive oil in such a way to get a paste that needs to be smeared with lamb steaks. In the resulting marinade, the meat should spend about an hour. At the end of the time, smelt the fragrant lamb on a hot skillet without oil, for 2-3 minutes on each side.

Meanwhile, we blanch the carrots in salted water for about 2 minutes. Add broccoli and, after 3-4 minutes, peas. Once the vegetables are soft - throw them into a colander and pour lemon juice. The dish is ready, nice appetite!
