How to cook cutlets from squid?

First squids need to be thawed, since we often sell them frozen, and clean them thoroughly. Defrost the squid necessarily at room temperature. No boiling water or microwave. After defrosting the shellfish should be thoroughly cleaned of the viscera, remove the horta, film and rinse under cold running water. As you can see, nothing complicated. And calamari are prepared very quickly, much faster than any meat dish.

Defrost the squid (at room temperature) and thoroughly rinse under running water. We lay the carcass with the back on the cutting board, make a cut along the abdomen and remove the chord and the insides. Now carefully peel off the skin. Once again we wash the squid, put it in a bowl, cover and put it for 1 hour in the refrigerator. We clean the onion and let it pass along with the squid through the meat grinder. Best of all, skip them twice, then the squid cutlets will be tender. Add pepper, salt, spices to the stuffing and carefully mix. Now from squid we form cutlets and put them on a frying pan with preheated vegetable oil. Fry from both sides until a mouth-watering ruddy crust.

Fans of dietary nutrition can cook cutlets from squid for a couple. We prepare the forcemeat in the same way as in the recipe above, then we form the cutlets and put them in the steamer for 20-25 minutes. If you do not have a steamer, then you can use the usual colander and a pot of boiling water.

Then, let's skip shellfish, along with onion, through a meat grinder, add flour, eggs, salt, pepper and carefully knead minced meat. From the received mass we will form cutlets, we will lay out them on a baking sheet and we shall send to an oven (180 degrees) for 20 minutes. When serving, cutlets with squid can be decorated with greens.
