The original way to tastily overcome the summer heat is to make cheese ice cream. The technology of preparation, in general, practically does not differ from the classical, and only one of the stages involves the addition of a key ingredient - hard cheese.

At the heart of this recipe is not one, but two different kinds of cheeses. The first, classic cream cheese, is responsible for the consistency and creamy taste, and the second, cheddar - for an amazing aroma and light spicy.

In a saucepan, combine the cream with milk and cream cheese. Put in the sugar and wait for the crystals to dissolve, stirring the creamy mixture over a small fire, bringing it to almost boiling.

Whisk the yolks and start gradually pouring to them about a glass of hot cream mixture with constant stirring. Pour the finished mass to the rest of the cream, return everything to the fire and cook until the base of the ice cream thickens. Cool the mass, pour it into the ice cream and add the grated cheese. Continue to prepare by following the instructions in the device manual. Cheese ice cream at home should completely freeze in the freezer before use.

Unlike the previous recipe, ice cream cooked according to this technology has a uniform consistency, since cheese is added directly during cooking.

Before you make cheese ice cream at home, heat the milk, dilute the sugar in it, waiting for the full dissolution of crystals. When the milk base is warmed and almost reaches the boil, pour out about half of the total to the beaten yolks, while continuously mixing everything.

Pour the milk with yolks to the milk on the stove and cook, waiting for the mass to begin to thicken. Put in the grated cheese and let it completely melt. Strain the mixture through a sieve and pour into the ice cream maker. Cook by following the instructions.

After the end of cooking in the ice maker, put everything in a container and store it in the freezer.
