Chanterelle soup with cream

We melt the butter and fry it on it for about 2 minutes, add mushrooms and continue cooking for another 5 minutes. Melted butter in a thick-walled pot and fry it chopped shallots and sage for about 3-4 minutes, until the onion is soft. Mushrooms cleaned of dirt with a brush and add them to the onions. Mix well the contents of the dishes so that the butter evenly covers the mushrooms. Chanterelles fry until fully evaporated excess moisture, salt, pepper and pour cream and wine. Stew mushrooms in cream 3-5 minutes, then add grated "Parmesan" and wait until the creamy sauce thickens. You can continue evaporation of the liquid, or immediately serve the dish to the table as a sauce of chanterelles with cream to pasta, or meat.
