Whisk the butter with a mixer and sugar. We break the eggs neatly, separating the protein from the yolk. We put the proteins temporarily in the cold. Chocolate melt, and then cool a bit. Mix the chocolate with the butter mass. Pour in cognac, pour in vanilla sugar and stir intensively with a mixer until smooth. Without stopping the mixer's stroke, we introduce yolks into the chocolate mass and continue the whipping process until smooth.

Now prepare a dry mixture - clean almonds from the skin and grind the blender. And that it is a little softened, before it pour its minutes on 10 hot water. Sift flour, saturate it with oxygen, and then mix it with baking powder and cocoa.

Chop the egg whites with a mixer, starting at a low speed and gradually increasing it. Pour into the resulting mass of sugar and whisk to a strong foam. Approximately half of the resulting mass is added to the chocolate mixture. Here we add flour with baking powder and cocoa. Triturate with chopped almonds and gently mix. Now, finally, add the remaining whipped proteins to the dough and stir until homogeneous. The resulting dough is placed in a split form. We bake the cake for about 1 hour at 180 degrees. Then we leave the finished biscuit for 8 hours. Thanks to this, he will rest, nastyaetsya and then with further cutting will not crumble. After that you can start assembling the cake. We cut the cake into 2 parts, warm slightly apricot jam. We impregnate them with the bottom cake, and then cover it with a second crust, cover the whole cake with jam, including the sides.
