The pink wavelet, as well as the white freckle, the mamchin white, are mushrooms of the genus Mlechnik of the family. Raw rye with a dense flesh and characteristic sharp taste (in some ways, resemble a mushroom). In the flesh of freckles contain proteins, valuable mineral compounds, fats, organic acids (lactic, acetic, oleic), carbohydrates (mainly in the form of fiber).

The wavelets grow in groups, mainly in the northern part of the forest zone, in birch and birch-mixed forests, forming mycorrhizas with wood. The mass fruiting of the freckles occurs usually from the end of June to October. The wavelet refers to conditionally edible fungi, therefore before preparation in any variant requires obligatory and thorough soaking and / or blanching. The waves are salted or marinated, harvested for the winter, sometimes eaten in fried or stewed.

Let's consider several recipes for preparing freckles. The important point: for any variant of preparation of the waves it is better to choose mushrooms strong, young, without wormholes.

Recipe for marinated freckles for the winter

The waves are washed and soaked in cold water for a minimum of 12 hours (during this time we change the water three times). We clean the soaked freckles from "fringe" and (if large) cut into 2-4 parts. Once again, rinse, pour water and boil for 20 minutes, then throw it back in a colander, and then lay it in cans sterilized with steam. Together with the mushrooms lay all the dry spices. You can also put a little of garlic (whole denticles) and onions, cut into rings, into the jars.

Cook the marinade from water, sugar and salt with the addition of currant leaves (you can also add cherry leaves, raspberries and dill umbrella). Fill the seething marinade with a wave in the jars, cover with lids and wait 20 minutes. Merge the marinade back into the pan and once again bring to a boil, after which we again pour the wavelets in the cans with a boiling marinade. Add the vinegar essence separately to each jar. Roll up the sterilized covers. We put the jars upside down and cover with an old blanket until it cools down completely. It is advisable that before the opening of the jar and the use of marinated freckles in food, not less than 2-3 weeks have passed (or better, more).

The recipe for salty freckles

Washed mushrooms soak in cold water for at least 12 hours (during this time 2-4 times change the water).

We wash mushrooms, we put in a pan and fill it with steep boiling water. Wait 10 minutes and drain the water. Repeat the cycle, you can even 2-ydy, then throw the mushrooms in a colander.

We lay mushrooms in a jar with layers, pouring salt, spices and restoring the leaves and umbrellas of dill. We fill the jar not to the very neck, leaving free space. Cover the top with horseradish (you can, and cabbage) and press it with clean wooden sticks so that the brine covers the mushrooms. Tie the neck of the cans with a double layer of gauze and place it in a cool place (the optimum temperature is from 0 to +3 degrees C). Mushroom- freckles are greased for at least 6 weeks.

Marinaded or salted marinas served well with boiled potatoes , rice, any porridge, fish and meat dishes. A wonderful snack for vodka, berry and bitter strong tinctures.
