Shchi with mushrooms and fresh cabbage

Shchi is a Russian national dish, a soup-soup of a filling type with an acidic taste that can be cooked with meat or in lean version on water, on fish broth. Another necessary component of cabbage soup is white cabbage, you can use sour or fresh (in this case, soup must be acidified).

Meat is best to take beef, a piece of pulp on the marrow bone. Alternatively, you can prepare chicken with chicken or pork. Today we will cook soup with mushrooms and fresh cabbage.

On the meat (whole piece), cook the broth with 1 onion and spices. We extract the meat from the pan and cut it into small pieces, throw the bulb. In a frying pan, melt the butter, briefly pass on the finely chopped onions with mushrooms, then transfer to the broth. We clean carrots and potatoes, cut into small slices. We put into a pan: potatoes and carrots, string beans (we cut each pod into several parts). Cook for 12 minutes, then add the finely chopped cabbage and boil for another 8 minutes. Return the meat to the pan. We give shcham a little to brew, pour into plates and add on a slice of lemon. Season with chopped garlic, sprinkle with chopped herbs. It is good to season the cabbage with sour cream, serve black bread and a glass of bitter or berry tincture as an aperitif.

Fresh cabbage soup with mushrooms

Shinnings cabbage, carrots three on a large grater, cut the mushrooms fairly finely. In the saucepan in oil, we pass the mushrooms with carrots, add cabbage and stew for 8-12 minutes. Pour water or broth. Boil for 8 minutes. Add the juice of lemon, chopped onion and greens. Turn off the heat and press under the lid for 8 minutes. Season with garlic. Sour cream is served separately.

It is also possible to include separately boiled potatoes into the composition of the fasting cabbage soup, cut it into small slices.
