Pie with lemon

For breakfast, lunch or dinner on weekends, you can make a cake with lemon. There are many different recipes for such baking using different types of dough, with various additives (and without them). Tell you how and what pies with lemon can bake.

Recipe for puff cake with lemon

Melt (or melted) butter mixed with flour, sour cream and eggs. Add soda, extinguished with vinegar, cognac and vanilla. We knead the dough (you can use a mixer for this at low speed). The dough is divided into four parts, we add them to each other, smearing with melted butter. Roll out, crumple in a com and repeat the cycle 1-2 times. The dough is wrapped in a film and placed on the shelf of the refrigerator for 2 hours - let it "rest".

By the right moment we are preparing the filling: we clean the lemon as best as possible and crush it using a blender, combine or grater. We make sure that the bones do not fall into the filling. Add sugar and mix thoroughly.

From the finished puff pastry we roll out 2 layers, one of which is laid out on a baking tray, covered with a sheet of baking paper, oiled. From above on a layer of the test an equal layer we spread a lemon stuffing and we cover with the second layer. The edges are tampered with. Bake at a temperature of about 200 degrees C for 25-30 minutes.

Following the same recipe, you can bake a pie with a filling of lemon and orange and / or apple.

For this, the stuffing is made from the citrus fruit punctured in the blender. Apples can be grated and mixed with mashed potatoes and lemon so that it does not darken. Or you can cut the apple in very thin small slices and lay them on the dough layer, and then distribute evenly the citrus-sugar stuffing. From the top we cover with the second layer, we patch the edges and bake in exactly the same way as in the first recipe.

You can also bake a more satisfying pie with cottage cheese and lemon. For this sugar-lemon filling is mixed with cottage cheese. In the rest the process of preparation does not differ. We serve these pies with coffee or tea. You can serve a glass of limoncello or another liqueur.

Sand cake with lemon

We clean the lemon and grind it in any convenient way (blender, meat grinder, combine, grater). The resulting mass is mixed with half a serving of sugar and semolina. Thoroughly mix.

Now the dough. Sifted flour mixed with eggs, melted butter and the remaining sugar. Add cognac, vanilla and a whisper of soda vinegar. Knead the dough with your hands, oiled. Stir thoroughly until elasticity.

The finished dough is divided into two parts (approximately 4/5 and 1/5). For the most part, make a round, non-thin layer and lay it in a shallow shape (oiled) so that the edges of the seam cover the side. On the dough on top spread evenly lemon stuffing. The remaining dough is rolled into a layer and cut into strips. We make a lattice of strips. Bake in the oven at a temperature of 200-230 degrees C for 25-30 minutes. We put the prepared pie in the form with a plate and turn it over, remove the form, cover it with a dish and turn it over again. Before cutting, lightly cool the cake. Serve with tea or coffee.
