How to cook marshmallow with your own hands at home - recipe
Ingredients:
- gelatin - 25 g;
- filtered water - 250 ml;
- granulated sugar - 410 g;
- invert syrup - 165 g;
- common salt - 1 pinch;
- powdered sugar - 90 g;
- starch potato or corn - 90 g.
Preparation
First, boil the water and let it cool down to room temperature. After that, half the portion is mixed with gelatin and left for swelling. The remaining water is poured into a ladle, add sugar, a pinch of table salt and invert syrup. Warm the mixture to a boil, stirring, and then reduce the heat to a minimum and boil the mass, stopping the stirring, for seven to eight minutes.
Now, the gelatin, which has been swollen for twenty minutes, is heated in a water bath or in a microwave until it is completely dissolved, and then placed in a convenient vessel and start whipping with a mixer, selecting the minimum speed. Further, without stopping the process, pour in a thin trickle the resulting hot syrup.
Gradually increase the speed of the device and process the mass for at least fifteen minutes. The result of this action should be the brightening of the mixture and the acquisition of an airy, slightly viscous texture that resembles a marshmallow mass. If necessary, you can fill the marshmallow with the desired color scheme, dividing the mass into parts and adding to each dye.
We spread the obtained substance on parchment covered with oil and a bit of oil refined with oil or baking sheet and place it for freezing in the refrigerator. For mastic we use marshmallow immediately after hardening, and for consumption as a sweet treat, cut the cooled layer into cubes and sprinkle with a mixture of powdered sugar and starch.
Home-made marshmallow - a recipe without sugar
Ingredients:
- gelatinous powder - 30 g;
- water filtered, boiled - 250 ml;
- sugar substitute (free-flowing) - 50 g;
- syrup - 165 g;
- common salt - 1 pinch;
- flavoring food - to taste;
- corn starch or potato starch;
For syrup:
- citric acid - 1 pinch;
- water filtered - 150 ml;
- sugar substitute (free-flowing) - 70 g;
- soda food - 1 pinch.
Preparation
To prepare the syrup, add the sugar substitute in the water, mix it and heat the mixture to a boil. Now we throw the citric acid, stir again, cover the container with a lid and cook the contents for fifty minutes at the lowest heat. After the complete cooling of the finished syrup, dissolve a pinch of soda in a tablespoon of water and add it to the syrup, while continuously stirring the mass until it acquires a viscous texture.
