The origin of the recipe of lentil soup is associated with a legend about the amazingly beautiful girl Ezo, who was forcibly given in marriage and forced to leave her homeland. In memory of her mother, which she missed very much, she invented a soup of lentils. Currently in Turkey lentil soup is traditionally prepared right before the wedding.
Lentil soup recipe for turkey
Ingredients:
- 4 tbsp. l. oil;
- 2 finely chopped bulbs;
- 1 glass of washed red lentils;
- 1 tsp. paprika;
- 2 tbsp. l. tomato paste;
- 1/2 cup of wheat bulgur;
- 2 liters of vegetable or beef broth;
- 1 tbsp. l. dry leaves of mint;
- 1/8 tsp. cayenne or red pepper;
- Garnish: lemon slices and a few fresh mint leaves.
Heat the oil in a large saucepan and fry onion over low heat until it turns golden - about 15 minutes. Add paprika, lentils, bulgur and fry for 2-3 minutes. Now add the tomato paste, broth, and hot pepper, bring to a boil and cook until soft for about an hour.
When everything is ready, crumble the mint between the palms and add to the soup. Stir and remove the soup from the fire. Let it brew for 10-15 minutes, then pour into plates, adding each lemon slice and fresh mint leaves, and enjoy lentil soup over Turkish, cooked according to a traditional recipe.
The recipe for lentil soup puree
Ingredients:
- 1 glass of orange or red lentils;
- 1/2 cup of rice;
- 2 chopped onions;
- 2 chopped carrots;
- 4 tbsp. l. wheat flour;
- 150 g of cream;
- 1 tsp. cumin;
- 1 tsp. turmeric;
- 2 tsp. salts;
- 1/2 tsp. ground black pepper;
- 1 tsp. ground coriander seeds;
- 4 tbsp. l. olive oil;
- 2 liters of water;
- 1 lemon;
- 1 bunch of chopped parsley.
In a large saucepan pour 2 liters of water and throw into it lentils, rice and 1 teaspoon of salt. Brew it all on low heat for 40 minutes. In a frying pan add the olive oil and onions and fry the onions for 5 minutes. Then put the carrots and cook for 3 more minutes.
Following the recipe, lentil soup puree is usually served hot.
In the recipe of lentil soup, you can use green instead of red lentils, and also include other vegetables such as carrots, potatoes, celery, parsley and onions.
