Eggplant sandwiches

Eggplants are very useful summer vegetables, from which you can easily prepare a variety of stunning dishes: they can be baked in the oven, stew and fry. Eggplant washed and cut into thin circles. Fold them in a bowl, sprinkle with salt, spices and leave to stand for about 20-30 minutes, so that out of them came out all the extra bitterness. Then the vegetable circles are thoroughly washed and put on a towel, leaving them to dry out. Eggs are broken into a separate small bowl, we throw salt and whip a bit. Ham is cleaned from the film, cut into the same thin rings on the kitchen cutting board and put in a separate bowl. Only note that the thickness of the sausage pieces should not be more than the thickness of the eggplant slices. Cheese shinkuem also thin plates and lay out separately. Now put on the dry surface of the table half a circle of eggplants, then for each circle - in one layer cheese cubes, and on top - slicing ham and cover with one more circle of eggplant.

Now take the pan, cover with baking paper and evenly grease it with sunflower oil using a brush. After that carefully take one at a time our sandwiches, so they do not fall apart, and lower them carefully first into the egg mass, and then into a plate with breadcrumbs and crumble. We do this procedure with all the sandwiches, after which we put it on the pan, at a distance from each other. We pour them sunflower oil and send the baking sheet into the heated oven. Bake sandwiches for 20 minutes. If desired, grease the finished dish with mayonnaise and decorate with chopped herbs. We serve ready-made sandwiches from eggplants, not only hot, but also in a cooled form.

Eat medium-sized eggplants, washed and cut carefully along to get long and thin slices. We spread the cut vegetables into a deep bowl. Egg whites slightly podsalivaem and a good beat up until the formation of foam. Fill the eggplant with the egg mixture so that it completely covers the vegetables. Fry eggplants to a ruddy crust in sunflower oil, and then carefully shift them to a kitchen towel to get rid of excess fat. Meat washed under cold water, dried and rubbed with salt and ground pepper. Fry the pork in a dry frying pan, then pour a little butter and fry the meat until cooked.

Finally, pour the vinegar, wait until it evaporates, and add the soy sauce to taste. After a minute we remove the frying pan from the fire, we cool the meat. In the meantime, mix homemade mayonnaise with squeezed garlic and chopped herbs. We smear each slice of eggplant with this mixture, put half the fried meat on one half, and cover the other half with it. That's all, we got sandwiches. We decorate sandwiches with aubergines and garlic greens and serve to the table.
