Delicious vareniki with cottage cheese is an original dish of Ukrainian cuisine. How to make vareniki with cottage cheese? There are many different recipes, but the general principles of cooking this dish are: dough of good flour, fresh quality curd, fresh eggs, natural butter and sour cream + some skill and diligence of the cook. Curd for dumplings should not be sour or too dry. It is better if the cottage cheese is fatty enough. The filling is prepared quite simply: the cottage cheese is rubbed with eggs and a small amount of butter until uniform. Cottage cheese mass can be added - then you will get salted dumplings with cottage cheese. And you can add a bit of sugar, cinnamon and a little vanilla to the curd-egg mass - it will also be delicious.

Now, gradually add to the curd-egg mass sifted flour and knead the dough. We spread the dough on the table covered with flour. We divide it into equal parts, we form out of them thin sausages, from which we slice the oblique pieces with a knife, which are called lazy vareniki.

You can do in another way: knead the dough for the same recipe and roll it into a not very thin sheet, cut into diamonds. Vareniki dip into salted boiling water and cook until floating. We extract the dumplings with a noise, pour with melted butter and sour cream. We'll lay out the lazy vareniki with the help of a noise on the dish and with the melted butter. You can still bake lazy dumplings in the oven. You can prepare them for future use and put them in the freezer compartment of the refrigerator, rearranging the food film. When vareniki freeze well, they can be shifted into clean bags.

A little bit. All thoroughly mixed. Cut off some of the prepared dough, roll it out with a rolling pin into a thin sheet and cut out the mugs with a glass. Although, of course, you can cut the dough into small pieces and each individually roll out a rolling pin. Put in the middle of each mug a little stuffing, tear the edges each varenik and add the prepared dish to a flat plate or to a clean plank. Cook better in boiling salted water. When the dumplings come up, you can boil them for another minute and take out with a noise. Ready vareniki are usually served with butter and sour cream.

Cottage cheese and fried onions - it's delicious

You can cook vareniki with browned onions and cottage cheese. All proportions are the same, but instead of green onions, take 1-2 medium sized bulbs. We'll peel the onions, finely chop them, save them in a frying pan to a golden hue, cool them and then mix it with the curd mass. It should be noted that the taste of vareniks with a scrambled onion is completely different.
