A shank or "Eisbein" as the Germans call this dish, has its own history and traditions. For Czechs and Germans, this is generally part of the national traditions, but at the same time in the east they are very fond of this dish, only of course with the use of their spices and recipes. Therefore, the preparation of this dish can be so different that everyone can choose and prepare their favorite recipe.

As always with such dishes, everything is not so simple, cooking does not begin in the kitchen, but in the store or in the meat rows of the market. It is very important to choose a good shin, which later in the kitchen will become a shank. The shin should not be very large, fat and old (in terms of the age of the pig, and not the freshness of the meat), at the same time too young will be small, lean, in general one bone and 200 grams of meat. You should search for the golden mean, do not hesitate to consider, pick up and touch the chosen product. Ideally the shin should not be long, but plump, meat, with not a lot of fat. You should understand that the skin in the shank is also edible, so the skin should be tender, thin, light and without damage. If you still have a shank with bristles, then it must be sedimented and well washed in warm water with the help of the hard side of the kitchen sponge.
