Grapes from cauliflower

Gratin is a dish that has an appetizing crust, which is prepared by baking in the oven.

Usually grated cheese is used, grated cheese, breadcrumbs, eggs, thick sauces or compound mixtures of similar products.

Gratin from cauliflower and broccoli can be cooked with chicken or in a vegetarian version, in any case, this dish is quite consistent with the principles of healthy eating.

Heat the cream in a scoop (better do it in a water bath), pour in the wine, add mustard, pepper, nutmeg. We warm slightly to a boil without stirring, stirring. Add the chopped garlic and filter through 5 minutes with a strainer.

Warm up the oven.

Chop the chicken meat in small pieces-small blocks or short strips. It can be raw or already boiled meat in broth. We disassemble cabbage on inflorescences (so that it turned out not large), we place it in a working bowl and pour boiling water for 5 minutes, after which it - in a colander.

A little warm up the refractory shape and lubricate it with oil. In the form of lay out pieces of meat alternately with broccoli. Fill evenly with sauce and bake for half an hour. Reduce the fire to the weakest. Gently push the shape and sprinkle the almost prepared dish with grated cheese mixed with finely chopped greens. Return the form to the oven and bake for another 10-15 minutes.

In the vegetarian version we cook exactly the same, only without the chicken. Or you can immediately - blanched in boiling water cauliflower with sauce and sprinkle with cheese. Baking time can be reduced to half an hour.

To this dish it is good to serve slightly dried slices of white baguette and a glass of white table wine.
