To make a biscuit cake with strawberries and curd cream, first bake a biscuit. Cool the eggs and divide them into proteins (whisk until they turn into a stable foam) and yolks. In the protein foam, without stopping to beat, gradually - in 3-4 times - pour half of sugar, when it dissolves, add the yolks. The sifted flour is also added in portions and gently blended with the spatula, so that the mass does not lose its splendor. The finished dough is transferred to a greased form and we bake our biscuit for about a quarter of an hour or 20 minutes at 200 degrees. While baking a biscuit, from 200 g of strawberries, turned into mashed potatoes, and half a glass of sugar brew confiture. After boiling the filling about 5-7 minutes, place the container with it in a bowl with ice and cool it. Chilled biscuit cut in half and grease each cake confiture. Gelatin soak with warm water and leave for half an hour, then lightly warm up (maximum to 80 degrees) and filter. The remaining sugar, 2/3 of strawberries, cottage cheese, cream and butter is placed in a blender and whipped until smooth. Add the gelatin and mix. We collect the cake: cake, cream, the second cake. We decorate the cake with the remaining strawberries and whipped cream. To make a chocolate cake with strawberries and curd cream, add to the dough with flour 3 tbsp. spoons of quality cocoa, and in the cream - melted chocolate, to taste - white, black or creamy - 2 large tiles. Cake with curd cream and strawberries is served chilled, if at once the cake is not eaten, be sure to keep it in the refrigerator.

Without biscuit

If it's hot outside and the idea of ​​turning on the oven even for half an hour is simply unbearable, prepare a cake with strawberries without baking. This recipe is even simpler.

We begin to prepare the dessert from the preparation of the form: a split form with a high border is lined with parchment, cutting the workpieces for the bottom and the sides separately. To get a substrate, turn the cookie into a crumb. This can be done with a blender, meat grinder or crush. Crumb mixed with half the softened oil. Oils may need a little more - depends on the type of biscuit. The resulting mass is distributed evenly on the bottom of the mold and we remove it into the refrigerator. Gelatin is soaked, heated and, when it dissolves, filter. Strawberries are divided into 3 parts. The first part is cut into halves, the second is mashed, the third cut into plates. We dissolve in warm water strawberry jelly (the recipe is usually on the package).

Cooking the cream. Cottage cheese is wiped through a frequent sieve, put into a blender and beat with half a sugar, the remaining butter, strawberry puree, gelatin and cream. If you want to make a cream cheese cake with strawberries, take 500 ml of cream. When the mass became creamy and homogeneous, we collect the cake. Along the side of the mold, we lay out the halves of the strawberry, the rest we place on the substrate. From the top distribute the curd cream, put on it slices of berries and fill the strawberry jelly. We send the cake to the refrigerator for a time sufficient to freeze the jelly (usually 3-5 hours).
