Recipes for cooking chicken soup are great, but the main ingredient is, of course, chicken broth . On its basis, the soup is light, dietary, with a number of beneficial properties and vitamins. And due to the increased protein content, this first dish has adequately occupied the place of the main food for restoring the weakened human body.

The best broth is obtained from a middle-aged chicken, which is being cooked for a long time, but quite decent soup can be obtained using also young parts of the bird carcass, such as wings, legs and chicken breast.

Today we will tell not only how to make a classic soup on chicken broth with vermicelli, but will also touch on the options for cooking with other ingredients.

A simple recipe for chicken soup

Chicken meat washed well, put into a pan, poured with purified water and cook until ready. Then take the meat out of the broth, separate, if necessary, from the bone and divide into fibers.

Potatoes are peeled, cut into cubes and thrown into broth. Carrots and onions are cleaned, crushed with cubes or straws, browned in a frying pan with vegetable oil and sent to the potatoes. Season with salt, throw peas of sweet pepper and laurel leaves and cook until the potatoes are ready. Then we throw the vermicelli, the chopped greens and return to the saucepan the chicken pieces. We boil two minutes, give five minutes to brew, and serve to the table.

Recipe for chicken cream soup with rice

We clear onions and carrots, wash them, cut them arbitrarily large pieces and put them in a pan. There we send well washed chicken and rice.

We heat the water to a boil and fill it with previously prepared components. Cooking after boiling for twenty minutes, reducing the fire to a minimum. At the end of the cooking, add salt, oregano and a ground mixture of peppers. Slightly cool and smash it with a blender.

In a frying pan or stew pan, melt the butter, pour in the flour and pass for one minute. Then, with a thin stream, pour in the cream and continuously stir intensively to avoid the formation of lumps. Warm up to a boil and mix with the cooked mashed potatoes. Ready soup season with fresh herbs, and served at the table.

Recipe for chicken soup with dumplings

Chicken meat is washed, cut into pieces, filled with purified water and cooked over low heat until cooked. Carrots and onions are cleaned, cut into cubes, fried until ruddy in a frying pan with vegetable oil and put into a saucepan with broth. There we also send the potato tubers that have been rid of the peel and chopped with cubes. We cook for ten minutes. During this time, prepare the dough for dumplings.

Beat a little egg, pour in milk, salt, pour in flour and mix until homogeneous. We collect in a spoonful of a teaspoon of a little dough and dip it into the broth. We repeat this until the last dumpling. Season soup with salt, throw laurel leaves, sweet peas and seasoning. In five minutes we can serve ready soup, seasoning with fresh herbs.
