Let's start with the test. Separate the yolks from the whites and whisk the latter to a thick foam, adding a little glass of sugar in them. Then add protein yolks, flour and mix well.

Form the baking sheet with paper and pour the dough into it, and then send it to the oven, heated to 180 degrees, for 30 minutes. While the biscuit dough is baked, cook the cream. To do this, you simply mix the remaining half a cup of sugar with vanillin, sour cream and cream.

When the dough is ready, it needs to be allowed to cool, and then cut across into two parts. One of the parts must be lubricated with cream, put on top of the berries, cover with another part of the biscuit and again lubricate with cream. Then send all this into the refrigerator for 30 minutes, and before serving, cut into small pieces.

Biscuit cake with protein cream

Now we prepare the cream. Chilled proteins whisk with citric acid in a thick foam, and then gradually add sugar. To impregnate we make a syrup: squeeze out the juice from orange and lemon, combine it in a saucepan with sugar and water and cook until the sugar dissolves.

We impregnate both parts of the biscuit with syrup, grease with protein cream and cut into portions. If desired, decorate with candied fruits or berries.
