Mannicki, pies on the basis of semolina, are known since the XIII century. Usually, manna grits are used not only for semolina, but also for wheat flour (as well as some other ingredients, for example, milk, sour cream, kefir, butter, cream, fruit and other fillers). And you can bake different tasty manicas and without flour.
Recipe for chocolate manna on sour cream without flour
Ingredients:
- semolina - 1 cup (200-250 g);
- chicken egg - 2 pcs .;
- sugar - about 100 g;
- cocoa - 3-4 st. spoons;
- sour cream is a natural thick medium fat content - about 250 ml;
- food soda - 1 pinch;
- cognac or rum (better dark) - 1 tbsp. a spoon;
- vanilla or cinnamon (only not together) - 1 pinch.
Preparation
Steam the mango 50-100 ml of boiling water. In another container, whisk or a fork, mix cocoa powder with half of sugar, sour cream, cognac and vanilla, so that there are no lumps. Add the soda (it should be extinguished with a few drops of vinegar or lemon juice). All we put in a bowl with a manga, we mix carefully and we leave at least for 30 minutes (and it is better on 50) that the manka swelled up.
After this time, add eggs, whipped in a stable foam, with the 2nd half of sugar. Gently mix and pour the dough into a form lubricated with oil (better silicone - convenient and safe). The oven should be warmed beforehand. Bake mannika for 30-40 minutes at a temperature of about 180 degrees Celsius. We check the readiness of the pie by punching in the middle with a match (it should remain dry) and / or visually. We remove it from the mold by turning it over the plate. We take off the form, cover it again with a plate and turn it over again.
Now it's a good idea to sprinkle a cake with powdered sugar or to cover with glaze, preferably chocolate or cream with the addition of a small amount of almond liqueur. When it stiffens, you can cut and serve for tea, coffee, hot chocolate , mate, rooibos, hot fruit compote.
Mannick with cottage cheese on milk without flour
Ingredients:
- semolina - 1-1.5 cups (200-250 g);
- chicken egg - 2 pcs .;
- sugar - about 100 g;
- cottage cheese - about 150 g;
- thick fruit syrup or liquor - about 30 ml;
- milk of medium fat content - about 250 ml;
- food soda - 1 pinch;
- vanilla or cinnamon (only not together) - 1 pinch;
- saffron and cardamom.
Preparation
Milk warm up (ideally up to 85 degrees C), steal them semolina and leave for 30-40 minutes. Beat eggs with spices and sugar. Cottage cheese is mixed with liquor. When the manno-milk mixture is swollen enough, mix it all together. Fill the dough greased with fat or oil form and bake mannik in the oven for about 30-35 minutes at a temperature of about 200 degrees Celsius.
In a certain way, following the same recipe, you can bake a mannik with apples without flour. We eliminate the cottage cheese from the recipe and add the finely cut apples into the dough. Do this in the last moments before pouring the dough into the shape, so that the pieces of apples do not have time to darken (or you can sprinkle the finely cut apples with lemon juice).
Unskilled mannik without eggs and flour
Ingredients:
- kefir high fat, or sparse sour cream - about 200-250 ml;
- semolina - 1 glass;
- fruit syrup thick - 2 tbsp. spoons;
- sesame seed - 2-3 tbsp. spoons;
- a pinch of soda;
- spices dry ground (cinnamon or vanilla, cardamom, saffron).
Preparation
Mix all the ingredients and let the test swell about half an hour. A little sesame leaves for sprinkling. The dough is poured into a greased form and baked for 30 minutes at medium temperature. Finished hot mannik sprinkled with sesame seeds. Before cutting, we cool.
