Suvlaki - recipe

Сувлаки in translation from the Greek language means "small shish kebabs, cooked on wooden skewers". Traditionally, they use pork, less often chicken, lamb or fish. Meat is cut into small pieces, marinated in a special mixture, then threaded on wooden skewers and cooked on an open fire or in the oven. They are served at the table either on skewers, or wrapped in pita, like shawarma. Let's talk about how to cook souvlaki at home.

Pete for souvlaki can be bought at the store already ready, but you can, if you have time, cook yourself. To do this, pour in a bowl of 100 ml of warm water and dissolve in it dry yeast. Then add sugar, mix and leave for 15 minutes. As soon as a magnificent "hat" is formed, pour the yeast into a saucepan, salt to taste, add the remaining water, and, gradually, pour in the flour. We knead a homogeneous dough, grease it with olive oil to make it smooth. We wrap the mass in a food film and put it away for 1.5 hours in a warm place, so that the dough is as follows, approached and increased in volume approximately twice. Then properly knead it, mix it, divide it into small balls and roll it into thin layers. Cover the tortillas with a towel, and let them go up well. This time, we heat the oven to 250 degrees. And only when it warms up well, bake our tortillas on a dry baking sheet for 5 minutes to a barely golden color. They must swell like balls.

How to cook souvlaki? Cut the meat into thin strips and properly beat off. Then we put it into a bowl, in which we will then marinate it, pour the seasoning and pour it with olive oil. Add the onion, vinegar and salt cut into half rings, to taste. We marinen chicken meat for about 3 hours. Then fry it in a dry frying pan, without adding oil, so that it is well browned. Now put on a pit and wrap. We serve ready Greek souvlaki with Dzadziki sauce. You can also simply marinate meat, put on skewers and bake in the oven.
