Achma from pita bread

Dish of Achma is one of the Georgian variations of a familiar puff cake for all of us. In this version of the dish, a delicate cheese or curd filling alternates with layers of pita bread soaked in milk or kefir.

How to cook acacia from lavash?

The pita bread from lavash is in no way inferior to the classical version of the dish made from homemade pastry, and it is prepared many times easier and faster.

The form for baking is smeared with a piece of butter and put on its bottom 2 lavash so that their edges hang over the sides. The rest of the pita bread is torn to pieces in medium size. Kefir beat with eggs, add salt and greens. Hard cheese rubbed on a large grater.

At the bottom of the lavash-covered form, we lay a layer of grated cheese. Pieces of torn lavash dip in the egg-kefir mixture and form the next layer of them. Then repeat the procedure until the form is filled, and as soon as this happens, we cover the acmu with pieces of pita bread hanging from the sides. We pour out the remains of kefir mass and flavor the cake with pieces of butter.

After 20-25 minutes, spent in the oven at 200 degrees, achma is ready.

Achm "Assorti" - a recipe from lavash

Classics is a classic, but without innovations in cooking, nowhere, therefore, we have many improved recipes for long familiar dishes. One of them is the Achma "Assorti", which combines different types of cheese for every taste and pocket.

Before making acmu, lavash is placed in a greased form so that its ends hang down. On a large grater, three cheeses, mix them and flavor them with chopped greens. Eggs whisk with yogurt, add crushed garlic and spices. The remains of pita bread are cut into squares.

At the bottom of the "basket" of lavash we put a mixture of cheeses, then, a layer of lavash soaked in kefir and again cheese. Repeat the procedure until we fill the entire form, and then cover the acmu "Assorti" with hanging pieces of pita bread. Lubricate the top of Achma with the remains of kefir and eggs, and then, we send it to the oven for 35 minutes at 200 degrees.

In such achma before baking, in addition to cheeses, you can put rings of tomato, bell pepper, or any greens. Moreover, in the native Georgia, in addition to dairy products, they like to add mince and sharp spices to this dish.

Lazy achama from lavash

As in previous recipes, the first thing to do is to make a baking dish, previously lubricated with oil, lavash.

Grated cheese and cottage cheese are mixed, salted and brought to a pasty consistency, adding milk (about ½ st.). We also drive eggs here.

The leftovers of pita bread are divided into pieces corresponding to the diameter of the baking dish. Each of these pieces is soaked in milk, and then stacked on a cheese-curd layer. When achma is formed, it is covered with the remnants of pita bread and poured with milk. The prepared dish is baked for about 45 minutes at 180 degrees.
