Whisk yolks with a mixer and gradually, without stopping, pour sugar. Next, pour in the oil and mix everything until a homogeneous mass is obtained. We sift the flour through a sieve with a baking powder and gradually mix it with the main ingredients. We knead by hand a delicious short dough for pie and divide it into 2 unequal parts. We roll them into a balloon, wrap it with food film and remove most of it in the refrigerator, and the other into the freezer. The oven is lit and left to warm up. Apples are washed, peeled, and the flesh is rubbed on the grater. Chilled proteins are beaten for several minutes with a mixer until stable peaks, pour sugar and beat again until it dissolves completely.
