Salad with cornichons

Gherkin - the general name of several groups of small-fruited varieties of sowing cucumbers and their fruits in size from 4 to 8 cm, taken before full maturation. Often the producers of agricultural products use the term "cornichon" as a designation for young high-quality fruits of any sort of cucumber of the appropriate size, intended for pickling and salting. This approach creates some confusion in understanding. That is, we can face the situation when, guided by the name, we buy one under the guise of another. So it's better to choose the products of famous companies.

Anyway, with the cornichons you can prepare a variety of completely refined salads, which will be very appropriate on the festive table.

Salad with chicken, red beans and pickled gherkins

Ingredients:

For dressing, you can use mayonnaise (preferably home cooking). Those who care about the figure, it is better to fill with a simple sauce (olive oil + natural vinegar + mustard) or unsweetened classical yoghurt spiced with spices.

Preparation

Chicken fillet boil with onion, laurel and spices. Let's cool and cut it with small brushes across the fibers. Open the beans, salt the sauce, rinse the boiled water and throw it into the colander. Pickled gherkins are cut in oval slices across or longitudinal slabs, sweet peppers - short straws, and onions - quarter rings. Narubim finely garlic and greens. All the ingredients and dressing are mixed in a salad bowl and decorated with greens.

This salad is good to serve with table wine, grappa, raki, vodka.

Salad with cornichons, pickled mushrooms, squid and ham

This salad can be prepared both in European style (using the same refills as in the recipe above) or in the Far Eastern style, using sesame oil, soy sauce, and lime juice for refueling.

Rinse carefully, pour a large amount of water and boil, without stirring, for 8 to 16 minutes (depends on the variety). You can throw it back on a sieve and rinse it with boiled water.

Squids can be in the form of fillets, then simply boil them in the form of large pieces within 3 minutes, no more. If squid in the form of small carcasses, first remove the skin and cartilage. Cut into a thick short straw (or larger - strips), if small - you can spiral. Mushrooms are washed and, if necessary, cut not too finely.

Onions cut into quarter rings, sweet pepper - straws, gherkins - randomly, ham in short strips or slabs across the fibers.

We put everything in a salad bowl. We add chopped greens.

We prepare the gas station. Mix (roughly equal parts or as you prefer to taste) sesame oil, soy sauce and lime or lemon juice. You can add silent honey.

In a mortar in garlic and red hot pepper (you can squeeze the garlic through a hand press, and chop the pepper with a knife). We connect with the liquid mixture and water the salad. Stir and decorate with herbs. Such salad can be served under vodka, gin, unsweetened strong tinctures, strong light wines, beer.
