We pour cold water into the container. Introduce citric acid, break the eggs. Pouring 90% of flour portionwise, we make a dough. Knead should be about 15 minutes. Then let the test stand for swelling of the proteins for 30 minutes. Margarine kneaded with the remaining flour, a rectangle shape.

Roll out the dough in the form of a rectangle, place the margarine stock in the middle, close it like an envelope, roll it out again, add it and send it to the freezer. After repeating this procedure twice, roll 1 cm of dough and divide into squares. With a knife, carefully cut out a smaller square in the middle, but not reaching the bottom of the dough. Put the dough on a baking tray - and into the oven. After the appearance of the crust, we take out and extract small squares from large ones - these will be the caps. We fill the tartlets and cover them with lids.

Puff pastry tartlets with filling

Pumpkin is crushed to small cubes. Sprinkle with brown sugar and washed raisins. Stirring. We make dough from a dough, cutting them with a glass on a flour-poured table. Put them in silicone molds. We make a pair of punctures with a fork. We pour the pumpkin filling. Bake for about 12-15 minutes.

Tartlets from ready-made puff pastry

The puff pastry is stored in the freezer in a finished form. We take it out of the cold, divide it into plates and spread it over the dusted table. After 30 minutes, the dough will reach the desired softness.

We roll it and divide it into squares. With half the squares, we proceed as follows: we cut out squares of smaller size from them. So we get rims and small squares. Spread an egg with large squares and stack them on the rims - so we will not have flat pieces of dough, but tartlets, where the filling will fit. Lubricate the egg rims and small squares. We bake. Fill the large squares with stuffing and we cover with small ones.

Roll each plate and cut out the squares with a conventional knife or with a figured blade. With a fork, make a couple of punctures on each piece of dough. We put the squares in the molds and keep them in the oven for up to 15 minutes.
