Preparation

Pine cones for honey should be harvested in the spring no later than the end of May, choosing for this place in the forest, located at a distance from roads and populated areas. Cones must be necessarily green and not yet opened. We wash them well and fill it with clean water, so that it is two centimeters higher in level from the surface of the cones. We put the vessel with the contents on the stove, warm it to a boil, reduce the intensity of the fire to a minimum and weld the workpiece for twenty minutes. Now we cover the container with the cones and leave it for a day to cool and infuse.

After a lapse of time, the resulting broth is drained and for each of its liter we add a kilogram of granulated sugar. We put the container again on the fire and heat the contents to a boil, continuously stirring it. Leave the resulting pine syrup on low heat to boil for an hour and a half, from time to time stirring the workpiece. At the end of cooking, add lemon juice or lemon acid to it. On readiness we let the pine honey cool, we pour it into the jar, cover it with a lid and determine it in the refrigerator. For a longer period of storage, we dispense the parison with sterile containers, cork and put under the blanket until completely cooled down.

By the same recipe and on the same principle, honey from pine buds or shoots is also cooked. It turns out not less tasty and useful.

There is another way of making pine honey from cones. To implement it, cones must be crushed and poured with sugar, taking two parts of sweet crystals for one part of the product. We put the mixture in a glass container, cover it with a cap cap and put it in a dark place under room conditions for two months. Over time, the resulting honey is filtered and used for colds with tea.
