The beauty and main difference of molasses from sugar is that the syrup does not crystallize and therefore the products with it stay fresh and soft longer. In addition, baking, prepared with the use of molasses, acquires a special taste.

You can not buy this ingredient in every store, so it's easier to prepare treacle at home.

How to prepare treacle?

Boil the water in a saucepan, as it must be hot for the recipe. Dissolve sugar in it, and constantly stirring, bring to a boil. Then add citric acid to the syrup, cover the pan with a lid and cook over a small fire for 45 minutes. Finished syrup cool slightly. In baking soda, add a little water, stir, then transfer the mixture into the cooled liquid and mix again.

The mass begins to foam strongly, leave it to infuse for 10-15 minutes. After the foaming stops, your treacle is ready for use. If there is a little foam on the surface, just remove it with a spoon. The finished syrup can be stored in a glass container in the refrigerator.

Sweet molasses

Most molasses are made from brown or black sugar (molasses), so it is also called dark molasses. According to our recipe, you do not need more than 10 minutes to prepare it.

Add the brown sugar to the pan, add water to it and cook the syrup on a small fire, stirring constantly until the sugar completely melts. After this, bring the liquid to a boil, let it simmer for 3-5 minutes and remove from heat. Leave molasses to cool at room temperature and then use for baking.

Light treacle at home

In some recipes, there is an ingredient such as light treacle, which as well as dark can be prepared at home. We will tell you how to make light molasses, for which you will need plain white instead of brown sugar.

Honey syrup

Preparing honey treacle at home is not a big problem, and the syrup turns out to be quite thick and viscous.

Combine all ingredients in a bowl, and cook the mixture over low heat until the sugar has melted. Then bring the syrup to a boil and let it simmer for about 5-7 minutes. Remove honey treacle from the fire, let it cool.

Fructose syrup

In the syrup recipe that we offer, grape is used, but if desired, it can be replaced with other berries that contain a lot of sugar, the result will not be worse.

Take the ripe bunches of grapes that you can find, rinse them in cold water and squeeze out the juice. Mass, which you will get, strain through gauze, pour the juice into a saucepan and boil over low heat until it becomes thick. At the same time, periodically stir the juice with a wooden spatula. Finished treacle should turn out to be a dark yellow color.
