Meat in an imperial way - a dish for a real monarch

The reason for this majestic name of this dish is still not clear. Whether it is in the eastern spices that are used during cooking and send us to real rulers, whether it's the taste that deserves to be presented to the emperor himself. So, or otherwise, the reasons for the name are not so important when it comes to cooking, in which the first role is played by the taste. And the taste of this dish is truly magical: sweet and sour, slightly spicy and brackish.

The recipe for pork in the imperial style

This recipe is adapted to the local assortment of ingredients, so to prepare this oriental dish, quite accessible Russian ingredients will fit.

The meat is washed with cold water, cleaned of veins and films, and cut into thin strips, where it is 2.5 cm by 1.5 cm thick. For marinade mix soy sauce, vinegar, a little honey, salt and pepper, lovers of spicy food can spice marinade with a pinch of a mixture of spices for pork. Thoroughly beat whisk all the ingredients until the honey dissolves. If the honey is not at hand, then you can replace it with brown sugar in equal quantities. We try the marinade on the palate: it should be slightly shallow and sour-sweet, if the balance of flavors was reached, then all that's left is to lightly heat the marinade on a plate, or in a microwave, and then pour into it slices of pork.

Pork will be marinated for about an hour, but the more, the better, up to 3-4 hours.

On a leaf of a foil we spread thick circles of onions, we water onions a small amount of vegetable oil and we spread from above the pickled pork. We wrap the meat with foil and send it to bake at 200 degrees for 1.5 hours. The prepared dish should melt in the mouth.

We serve meat in imperial style with boiled rice, light salad, or rice noodles.

If it concerns the preparation of pork, then the Chinese cuisine can not be avoided. A simple pork belly with a minimum of ingredients, which you can get in any themed store, turns into a tender and fragrant dish.

Pork belly rinsed with cold water and patted with a towel. We rub the meat with a mixture of five spices. Let you not be intimidated by this unusual name, this traditional seasoning can be found in any store of Oriental products, or ordered via the Internet. After 5 spices, rub the pork with salt and leave in the refrigerator for 2 hours, preferably - at night.

When the meat is marinated, the oven must be heated to the maximum temperature and put the meat on the top. We cook the pork in this mode for 10 minutes, and then reduce the heat to 180 degrees and leave to prepare another one and a half hours. Once the peel becomes crispy, heat again raise to 220 degrees and keep meat for another 30 minutes. Finished pork let us rest for 10 minutes.

To make sauce for meat, it is necessary to mix soy sauce, sugar, sweet chilli sauce and grated ginger together, and then divorce the sauce with 2 tablespoons of water.

Before serving, it remains to cut the meat into small pieces and serve as rolls of rice paper, or with boiled rice and vegetables.
