There are two options: cooking from a more liquid mass or from a thicker one. In the latter case, we cook as usual cutlets, floundering in flour. If from a more liquid mass - we cook like pancakes, pouring mincemeat into a frying pan with a spoon.

We thaw the defrosted chicken liver and discard it in a colander. We'll clean the onions and cut them into several pieces. The greens are washed and cut into small pieces. Liver, onions and greens let's go through the meat grinder (you can use a food processor, just do not grind too much). Add eggs, season with salt and dry spices. Thoroughly mix. Gradually add the sifted flour. Its quantity can vary quite widely - it depends on what mass consistency is preferable. You can add breadcrumbs.

Fry the cutlets

First warm the pan well, pour the vegetable oil. You can use pork fat. With a tablespoon we spread the patties on a frying pan, like pancakes. Fry the patties from the chicken liver on both sides to a characteristic golden brown color. Turn over the spatula. Ready-made food can be served with any side dish and different sauces, or simply with sour cream and twigs of fresh greens.

You can choose a healthier way of making cutlets from the liver. This will require a silicone mold for small pieces. We put the form on the sliding baking sheet. Lubricate it with oil and fill each cavity to half a hepatic mass. Now, you can put the pan with the form in a preheated oven to a temperature of 180 degrees. Bake for 25 minutes. You can cook cutlets from the liver and in a multivarquet for a couple - so even better - this way can definitely be considered quite dietary.

And still good and tasty are cutlets from turkey and chicken liver. We buy the same amount of chicken and turkey liver. Other proportions of products and manipulations look the same as in the recipe given above. Cook the cutlets from a liver turkey without the addition of chicken is not worth it: it is somewhat bitter in taste. And more: with chicken liver the stuffing turns out more plastic.
