Crostata with cherry

Crostata is such a sweet Italian open cake, which has become popular in other European countries. For the substrate of the blood, usually a short pastry is used, the filling can be from jam or fruit, sometimes with ricotta cheese, ground nuts and / or any creams.

We will tell you how to cook a crozata with cherries, black and / or red currants and cottage cheese (this habitual product will replace ricotta).

Sift the flour into a bowl, make a groove and add softened butter, sugar powder, eggs, salt, soda, vanilla, brandy. Well, but do not hesitate to knead the dough (you can mix it at low speed). The dough should not be sticky. We roll the most part of the dough into a layer, which we spread on a baking sheet baked with baking paper (it is better to oil the paper with melted butter with a brush). We form the rim, cover with a film and set it to a cool place for at least 40-60 minutes. There should be a small piece of dough.

Preparing the filling. Rinsed berries lightly sprinkled with sugar, when they let the juice - merge it, add to the berries a mixture of starch with powdered sugar, yolks. We prepare the curd cream from cottage cheese with cream and add to the fruit filling. Gently mix. Correct the density of a mixture of powdered sugar and starch.

At the right time, evenly fill the pie substrate with stuffing, from the dough remains we perform a grid, attaching the stripes to the border. We bake the crozat in a preheated oven for about 30-40 minutes. The dough should have a beautiful golden hue. Before cutting, lightly cool.

We serve crozatu with coffee, it is possible with tea. You can also serve some liquor, preferably Italian.
