Cake "Prague" - a classic recipe

Despite its name, the cake "Prague" and its classic recipe are in no way connected with the Czech Republic. Chocolate delicacy is a Soviet variation on the theme "Zaher", which gained popularity abroad. Now no one remembers the origins of the recipe, but there is no need for it, because now this luxurious chocolate cake has become the world's favorite treat.

Since this delicacy was born in Soviet times, there is no old recipe for Prague cake, but there is a Soviet GOST, a recognized standard with a win-win taste. We decided to apply to him in this recipe.

Preparation

Start with the preparation of the cakes, for them first all the dry ingredients from the list are connected. Separately turn into a foam egg whites, yolks and whisk with sugar. Carefully, to keep a maximum of air, mix the proteins with yolks and pour them into the dry ingredients. When you get the finished dough, mix it with the melted butter, pour into a 20-cm shape and leave to bake at 180 degrees for 35 minutes.

For cream, whip the yolk with water and condensed milk. Cook the mixture in a minimal heat until thick, and then cool. Whisk the soft butter and start to pour a cooled condensed mixture into it. In the final, add the cocoa and send the cream to cool.

Divide the cakes three times and lubricate the finished cream. After collecting the cake together, cover it with a layer of apricot jam. Heat the cream, fill them with chocolate, and after a couple of minutes stir and pour ganache on the surface of the cakes. This cake "Prague" is ready, it remains only to cool it and complement the decor to your liking.

Mix cocoa with condensed milk and sour cream. Start adding eggs to the base of the batter test, constantly whipping to add volume cakes. Alternately, with the eggs, pour sugar to the dough, and when the ingredients come together and the sugar crystals dissolve, begin to gradually pour in the flour. In the finals, mix everything with the hydrated soda.

Divide the dough between a pair of oiled forms for baking, and then send to the oven for 35 minutes at 185 degrees. Cool the cakes.

For cream, whip the soft butter together with the condensed milk and cocoa, and then cover with the air mass obtained each cake and side parts of the cake.
