Along with casseroles and pumpkin porridges, pumpkin pies are no less popular, those that will be discussed later can be called tarts, because the peculiarity of the American pumpkin pie is a crispy base of short-dough and a delicate, creamy filling.
Classic American Pumpkin Pie Prescription
This recipe definitely can be called old-fashioned, but it will be more correct to replace this definition with "classic." Even despite all the simplicity of taste combinations, pumpkin delicacy does not cease to amaze consumers with its versatility.

- butter - 75 g;
- granulated sugar 35 g;
- water - 15 ml.

- cane sugar - 130 g;
- water 75 ml;
- cream (fat content of 33%) - 480 ml;
- Pumpkin puree - 410 g;
- ground ginger, cloves, muscat - 1/2 teaspoon each;
- Ground cinnamon - 1 1/4 tsp.
- eggs - 4 pcs.
Preparation
Start the preparation should be given from the sand base: turn into crumb oil with flour and granulated sugar, beat in the egg, pour in water and mix again. Ready the dough collect in a com and wrap it with a film. Leave the base in the refrigerator for the time of filling.
Dissolve the sugar in boiling water and keep the syrup on the fire for at least 10 minutes to make it golden. After reducing the heat, pour in half of the cream, stir, add the remaining cream and let the mixture boil for 5 minutes. Meanwhile, beat the pumpkin puree with herbs. Add the creamy caramel, mix and let the filling cool down a little before driving the eggs.
Roll out the dough layer, cover the bottom and the sides of the mold with it, and pour the pumpkin filling over it. Place the traditional American pumpkin pie in a preheated 180 degree oven for about an hour. After a while, cool the treat for at least 2 hours before cutting.
American Pumpkin Pie with Cinnamon - recipe
Saturated with spicy flavors, food is more relevant than ever in the cold season. This pumpkin pie with a delicate filling, combines the flavors of cinnamon and bourbon - ideal for autumn.
Ingredients:
- short pastry ;
- cream for whipping - 240 ml;
- milk - 240 ml;
- eggs - 3 pieces;
- egg yolks - 2 pieces;
- Pumpkin puree - 470 g;
- vanilla - 1 1/2 tsp.
- ground cinnamon - 2 tsp;
- granulated sugar - 135 g;
- maple syrup - 60 ml;
- bourbon - 30 ml.
Preparation
Roll out the short pastry, distribute it along the selected form and put it to bake until it blushes at 190 degrees. Cool the base and take over the filling. Combine cream, milk and eggs together with yolks. Separately mix pumpkin puree, with vanilla, cinnamon, sugar and maple syrup. Pour into the pumpkin mixture of bourbon and put everything on the fire for 15 minutes. Gradually pour milk to the pumpkin puree and wait until the mixture again thickens a couple of minutes. Slightly cool the filling and pour it into the base of the dough. Put the cake in a preheated 200 degree oven for 30-35 minutes.
American pumpkin pie with condensed milk
Ingredients:

- evaporated milk - 530 g;
- eggs - 3 pieces;
- cinnamon - 2 tbsp. spoons;
- ground cloves, ginger - 1 teaspoon.
Preparation
Put the sandy base in the oven for 20 minutes (temperature - 185 degrees). Combine all the ingredients for the filler together and pour them over a slightly-cooled sand base. Return the cake to the oven for another 45 minutes. Before cutting chill.
