Soba noodles

Soba is the name of the Japanese national product - a long thin noodle made from a mixture of buckwheat flour with the addition of wheaten (also called dishes from this product). According to Japanese agricultural food standards, in canine noodles must contain at least 30% of buckwheat flour. Such noodles have a characteristic gray-brown shade.

Despite certain production standards, the word "soba" in Japan has a wide interpretation, they can be called any thin unprepared noodles (not only buckwheat, but also from other types of flour). If the word "soba" is called a ready-made dish, it means only buckwheat noodles.

Buckwheat noodles (in the sense, ready, cooked) are very popular in Japan - this is one of the options and components of national fast food. Soba noodles and various dishes with it are cooked both in expensive restaurants and at home.

Preparation

Mix the sifted buckwheat flour with wheat flour in a 1: 2 or 1: 3 ratio. Mix the relatively steep dough on the water, carefully, but briefly knead it and roll it into thin layers, cut with a sharp knife into long thin strips and dry them, spread out on paper or on boards. After drying, you can cook. You can use special noodles.

Remember well: buckwheat noodles are cooked until cooked in boiling water for 5-8 minutes, after which it should be thrown back to the colander.

The most popular recipes and forms of feeding ready-made noodles

Usually the ready-made noodles are served slightly chilled with sauces (in a separate bowl), or as soup noodles. Such soups are usually made from noodles and hot broths of different kinds, add ginger, green onions and other greens, season with sweet rice wine (mirin), soy sauce, wasabi.

Also prepared noodles can be served with tempura (special category of dishes in Japanese cuisine).

Tempura is made from fish, other seafood and vegetables (less often - meat or fruit). Using chopsticks (hasi), first dip the pieces of any original product into a bag of flour, water and eggs, then quickly fry in deep-fried (sesame oil, sometimes mixed with other vegetable oils). To the noodles of the dog with tempura it is customary to serve different national sauces.

We pour sesame oil into the frying pan and warm it well. Fry the quartered rings with onions and meat, cut into small pieces, (together) on medium-high heat for 5-8 minutes, stirring with a shovel and shaking the frying pan. Add the sliced ​​sweet pepper and broccoli, disassembled into small cots. Slightly reduce the fire, fry for 3-5 minutes all together, stirring, then pour a little water, reduce the fire to the minimum and blown out under the lid for 15-20 minutes.

Cooking sauce: mix rice vinegar with myrino and soy sauce, add the chopped garlic, season with hot red pepper. Cook the noodles of the dog until ready and throw it back to the colander.

We serve ready-made noodles with chicken and vegetables, sauce in a separate cup. This dish is good to serve plum wine, sake, mirin or Japanese whiskey.

Another ready-made noodle can be served with shrimps or other seafood.

Shrimp cooked or fried in a frying pan until pink color is obtained. Squid is boiled for 3 minutes in boiling water and cut into strips or spirals. In this case, it is good to serve salads from sea kale and, of course, sauces.
