Traditional patty for eastern cuisine of triangular or square shape - samsa - does not present absolutely any difficulties for cooking at home, especially if already prepared puff pastry is used as a basis. Filling for homemade samsa from puff pastry can be very diverse: meat eaters prefer pork, lamb or chicken, and vegetarians - peas, potatoes and pumpkins.
Uzbek samsa from puff pastry
Ingredients:
- puff pastry - 1 pack;
- lamb - 750 g;
- onions - 2 pcs .;
- salt - 2 teaspoons;
- cumin - 1 1/2 tsp of spoon;
- ground black pepper - 1 teaspoon;
- egg - 1 piece;
- sesame, vegetable oil.
Preparation
Preparing samsa from puff pastry is not a tricky and quick enough task, if you do not take into account the fact that meat for filling is desirable to cut manually so as to preserve its juiciness. As a filling, we chose lamb, but you can give preference to lamb and beef.
So, cut the meat into small cubes and also finely chop the onion. We combine the meat with the filling, add salt and pepper to taste, as well as ground cumin (ziru). To make the filling work better, mix the minced meat with the egg whipped with two tablespoons of water. Now, take up the dough. Puff dough thinly roll out and cut out circles. In the center of each circle we put the meat filling and connect the three edges of the dough in the center so that a triangle is obtained.
Lubricate each samsa with vegetable oil and sprinkle with sesame seeds. Bake pies for about 20 minutes in a preheated oven to 210 degrees.
Chicken puff pastry made from chopped dough
Ingredients:
- yeast puff pastry - 1 pack;
- chicken mince - 500 g;
- onions - 1 pc .;
- garlic - 2 cloves;
- Ground curry - 1 teaspoon;
- ground chili - 1/2 tsp;
- turmeric - 1 teaspoon;
- cumin - 1/2 tsp;
- mint leaves - 1 teaspoon;
- ground ginger - 1/2 tsp;
- salt, pepper - to taste.
Preparation
In the frying pan, we warm up the vegetable oil and fry the sliced onions on it until it is transparent. Mix onion with chopped garlic, add ground curry, ginger, chili, turmeric, cumin and chicken mince. Fry the filling until the excess moisture is evaporated from the frying pan. Then combine chicken minced meat with sliced mint and cool the filling.
Roll the layer of puff yeast dough and cut it into circles of equal diameter. In the center of each circle we put the meat filling and splinter the edges of the samsa from three sides to make a triangle. Lubricate the patties with vegetable oil and bake the samsa from puff pastry yeast for 15-20 minutes at 200 degrees.
Recipe for vegetarian samsa from puff pastry
Ingredients:
- potatoes - 500 g;
- butter - 20 g;
- hot chilli - to taste;
- Ground cumin - 2 teaspoons;
- Mustard seeds - 2 tsp;
- turmeric - 1 teaspoon;
- lemon juice - 1 tbsp. a spoon;
- coriander greens;
- puff pastry - 1 packing.
