If you are looking for an easy but festive salad on a banquet table, then pay attention to a bright snack of mozzarella with tomatoes and arugula. This three basic ingredients can be further supplemented by a wide range of additions, some of them we intend to pay attention to in this material.
Salad with rocket salad, tomato and mozzarella
Ingredients:
- cherry tomatoes - 1.3 kg;
- a clove of garlic - 1 piece;
- olive oil - 55 ml;
- a pinch of sugar;
- Balsamic vinegar - 15 ml;
- handfuls of arugula;
- mozzarella - 130 g.
Preparation
2/3 tomatoes cut in half put on a baking sheet and send to the oven for 20 minutes at 210 degrees. When the tomatoes become soft, mix them with the remaining halves of fresh fruits, season with sugar, pour oil and vinegar. Add crushed garlic teeth and mix the ingredients together. Put the salad on a cushion of arugula and place a mozzarella bowl in the center.
Salad with rocket salad, cherry tomatoes, mozzarella and shrimps
Ingredients:
- shrimp - 280 g;
- egg - 1 piece;
- breading panko - 1 item;
- two handfuls of arugula;
- capers - 2 tbsp. spoons;
- mozzarella - 245 g;
- olives - 20 g;
- cherry tomatoes - 280 g;
- Balsamic vinegar - 45 ml;
- olive oil - 45 ml.
Preparation
Peeled shrimp tails in an egg and roll in a crumb. Rinse the tails in an abundance of butter and spread on napkins. Divide the cherry tomatoes into halves. Olives cut into rings. Put the arugula on a dish, and spread the prepared ingredients over the pillow, together with shrimps, mozzarella cubes and capers. Whisk the balsamic with butter and pour the dressing with a ready-made snack.
Salad with rocket salad, cherry tomatoes, mozzarella and avocado
Ingredients:
- a handful of rye croutons;
- olive oil - 35 ml;
- handful of parsley and basil;
- tomatoes - 230 g;
- arugula - 70 g;
- fresh cucumber - 160 g;
- avocados - 1 piece;
- red onion - 45 g;
- mozzarella cheese - 90 g;
- lemon juice - to taste.
Preparation
Divide the tomatoes and cucumbers into pieces of equal size. Avocado cut into cubes and sprinkle with citrus juice, so that the fruit does not darken. Chop the red onion and add it to the olive oil along with chopped herbs and salt. Spread the vegetables on a cushion of arugula, add cheese cubes and pour everything with oil and greens. Sprinkle the prepared salad with arugula, cheese and tomato lemon juice to taste. Sprinkle the dish with crumbs before serving.
