Let's figure out how to cook Vietnamese rice. Rice carefully rinse with running cold water and fill with water in a cauldron or saucepan. Water should cover rice for 3-4 fingers. Bring to a boil and cook on low heat for 8-12 minutes. Cover the lid so that a very narrow gap remains, and drain the water. You can, of course, throw the rice on a sieve and even rinse with boiled water, if you want.

Now we are preparing vegetables. It is best to cook in a wok, but it is possible and in a conventional frying pan. Cut in half along the fruit of avocado, remove the pulp with a spoon and cut into cubes. We chop the tomatoes into thin slices. Warm up the oil and fry for 3-5 minutes on high heat at the same time onion, chopped with a quarter of rings, and pepper, cut into short straws.

We constantly shake the frying pan and mix it with a spatula. Add the avocado and tomatoes. Reduce fire to medium and stew for another 5 minutes. Add crushed garlic, red hot pepper and chopped greens. Season with lime juice and soy sauce. We serve rice with vegetables, pour all the sauce that has been formed in the frying pan, you can serve it separately. You can also file other Vietnamese sauces (they are quite exotic, especially fish, and may not like everyone).

It should be noted that the addition of fennel, zucchini, young green beans, canned sprouts of bamboo and tamarind paste to vegetables will make the taste of rice more Vietnamese more interesting.

You can cook and fried rice in Vietnamese. To do this, after boiling fry rice in sesame oil (can be with the addition of chicken or pork fat). Vegetables are prepared separately (see above).
