Preparation

The first stage in the preparation of real mutaka will be sifting flour. After that, it must be mixed with soda and baking powder, add vanillin, butter, and grind all the ingredients until a fine crumb is obtained.

Yolks need to be mixed with sour cream in a separate bowl, then gradually add flour to them and mix the ingredients until a homogeneous dough is obtained. The dough should not stick to your hands. It should be rolled in a lump and cleaned to rest in the refrigerator for 30 minutes.

While the dough for the mutaka is cooled, you can tackle the filling. Nuts should be chopped in a blender and mixed with sugar. After the sugar, proteins need to be mixed in, however, just as much as necessary to bind the nut mass.

Take the dough from the refrigerator and divide it into 4 equal parts. Each part should be rolled into a circle, and the circle cut into 16 segments. Now it's time to turn the bagels, for this you need to lay out the filling on a wide layer of dough, and then roll it into a roll.

The resulting bagels with stuffing can be sent to the baking tray, and the latter to the oven. Mutaki Baku usually cook for 20-25 minutes at a temperature of 180 degrees.
