Kubite: recipe

Quince cube (kubite, kubate) - traditional pastries in the kitchen of Krymchaks, from which the dish spread among other ethnic groups living in the Crimea, now, for example, it is considered Tatar. It is a cube with meat and potatoes, often with rice. Sometimes they cook and cube with pumpkin. In the traditional version, the pie is prepared from a puff pastry or from a simple yeast.

Dough on a cube

Fat knife is very finely chopped or pass through a meat grinder. We must pour the sifted flour onto the cutting board with a slide and make a groove in the middle, in which we spread the prepared fat. Flour the flour thoroughly with grease, then, gradually pouring in salted water, knead the steep dough. Stir the dough carefully and divide into two unequal parts (large - for the substrate, smaller - for the top layer of the pie).

Working with the test

Lubricating hands with fat or oil (vegetable or creamy), each part of the dough is pulled into a bundle and rolled up on a board in a circle with a spiral. You can also sandwich the dough, first by rolling it several times in a cake and smeared with melted fat, and then folding into a spiral circle, as described above. The dough prepared in this way, we leave to distance, and at this time we prepare the filling.

Cut the meat into pieces, keeping ribs and cartilage. Peeled potatoes cut into thin slices (semirings across). In the summer-autumn period, tomatoes and greens are added (parsley, parsnip, green onion, etc.). The greens are crushed or put in whole branches. The filling should be juicy enough.

On a floured board, we roll out a spiral dough piece for the bottom of the pie (periodically turning the workpiece) to a thickness of approximately 0.6-0.8 centimeters. We spread the lower layer of the dough on the bottom of a sufficiently deep pan, greased with oil or grease. The edges of the lower layer should cover the rim (that is, the walls of the baking sheet). On top of the dough lay the filling layers: chopped onions, then slices of potatoes, and on top - chopped meat. Pour evenly a little pepper and salt. We spread greenery and tomato slices from above.

Bake cake

Now we roll out the upper layer, in the middle of which we make a hole, around it we raise the edges of the dough and, tearing it, decorate it arbitrarily. Cover the top layer with a filling cake. We connect and protect the edges. Through the hole we fill 2-3 tablespoons of meat broth or water. The surface is lubricated with eggs or strong tea leaves. Place the baking tray with the cake in the oven. Bake cube at medium temperature. When the top of the cube is browned, pour in another 2-3 tablespoons of broth or water through the hole and lower the temperature. The total baking time is about 1 hour.

Kubet with pumpkin

The recipe for cooking a cube with a pumpkin is fundamentally little different from meat. However, it should be noted that in this case, you can use minced meat, steamed and chopped pumpkin pulp and boiled rice, or pumpkin flesh and rice without meat. Instead of fat, you can use natural butter. Pies cube well served with freshly brewed tea, with hot broth, koumiss or table Crimean wine.
