Preparation

Preparation of dough for khachapuri begins with beating of eggs. We achieve by means of a mixer of magnificent foam, and then we infuse kefir, pour in soda, sugar and salt, once again we beat and let all crystals dissolve. After this, we begin to introduce sifted flour, gradually gradually pouring it into the dough and stirring. We stop its addition after the soft, non-floating and slightly sticky consistency of the dough is achieved. We roll it with a lump, cover it with a food film and leave it for proofing for thirty or forty minutes.

For the filling, we process on the grater a piece of hard cheese, mix the resulting shavings with the egg, if desired, season with chopped herbs and ground pepper.

We divide the dough into eight equal parts, roll each up to a flat cake with an average thickness of five millimeters. At the center of each we put a little cheese filling, raise the edges, collect them upward with a bag and carefully patch. Now we lay the "bag" with a seam down, press it with the palm and roll it out neatly with a rolling pin.

When ready, fry the billets on a dry, thick-walled frying pan on both sides for about four minutes each. It remains only to generously smear the surface of khachapuri with butter and can be served.

Dough for lazy khachapuri with cheese on yogurt is prepared in three counts. It is enough to mix a bit of beaten eggs with yogurt, grated Adyghe cheese, baking powder, pepper and fresh herbs, and to mix flour and you can start directly baking khachapuri.
