So, first, let's make a dough for khachapuri in Adjarian. In a deep bowl, pour a glass of warm water. Then we drive one egg, add sugar and salt to taste. Next, sprinkle a well sifted through a sieve and add dry yeast. We mix everything well and knead a smooth elastic dough. Cover it with a towel and put it in a warm place for an hour. During this time, it should increase approximately twice. Then we well douse it and leave it for another 30 minutes.

In the meantime, we are preparing the filling. To do this, we take cheese, rub it on a large grater, add two eggs. If the suluguni is not salty, then add some salt to taste and mix.

The finished dough is once again kneaded and cut into five equal parts. Each roll out the rolling pin and give the pellets an oval shape. Then gently lay out on each layer of cheese filling, leaving intact only the edges of a width of about 4 centimeters. How to bake Adzharian khachapuri? Preheat the oven to 200 ° C, put the boats on a greased baking tray and bake for 30 minutes. How to cook khachapuri in Adzharian? We take the ready yeast dough, divide into 3 parts and roll out into pellets with a diameter of about 20 cm. Then sprinkle each thin layer of grated cheese on a fine grater. Further gently roll the edges of the flat cakes to the middle and slip them. We shift the khachapuri to a greased baking tray, add a little more cheese to the middle and send the cakes to the oven preheated to 200 ° for 30 minutes. As soon as the cheese melts, and the dough is deliciously browned, we take out the baking tray from the oven, break one raw egg into each boat and send the baking back for another 5 minutes.

Immediately before serving on each khachapuri in Ajarian we put a piece of butter, sprinkle with salt, pepper to taste and decorate with finely chopped greens of dill, if desired.
