How to marinate a duck for baking in the oven?

The duck has always been a crown dish on any table, especially the New Year, and on the eve of the coming holidays, the topic of the best marinade for cooking this delicious bird becomes especially urgent.

Below we describe how you can marinate a duck for baking in the oven and offer a recipe for a stuffed poultry with apples.

We prepare the marinade for the duck. To the vegetable oil, without odor, add seasoning for chicken, marjoram, basil, ground red and black pepper, salt and squeeze through the press six or seven dentures of pre-peeled garlic, add the juice of one orange and mix.

While marinade insists, we process the carcass of a duck. We wash it, if necessary, get rid of the viscera, rinse and dry again. Generously we rub the bird with the prepared spicy mixture inside and out, and then we determine in a package together with the remains of the marinade and place it in a cool place for several hours.

Directly before baking, turn on the oven, adjust it to a temperature of 220 degrees, and prepare the filling for the duck. We chop off the giblets, remove the apples from the pelts and the core and cut them in small slices or cubes and sprinkle with lemon juice, the remaining garlic is cleaned and shredded with plates. Mix apples with giblets and garlic, add marjoram, basil, pepper and salt, mix and fill the resulting mass with the belly of the duck. Then we sew the skin with a thread or with a toothpick.

A tray or a large form is lined with several sheets of foil, put orange mugs on the bottom, place the stuffed duck carcass on top, cover with two sheets of foil and seal it.

We put the dish in an already heated oven, bake for twenty minutes, and then reduce the heat to 180 degrees and cook another two hours. Now remove the top sheet of foil and bake the duck for another forty minutes, periodically watering with the allocated juices.

Upon readiness, we put the ruddy bird on the dish and decorate with fresh herbs and fresh oranges.

How to marinate a duck in wine with honey for baking in the oven?

First we prepare the marinade. To do this, we clean and squeeze garlic, mix it with salt, add ground ginger, nutmeg, cinnamon and pepper, mix and lay honey and vegetable oil. We rub a lot of good stuff with tolstick or punch blender with white. Now pour in wine and wine vinegar and mix until homogeneous.

Prepared properly duck carcass rubbing on all sides prepared wine mixture, stacked in a scallop or other capacity and pour the remainder of the marinade on top. Ideally, when the duck will be marinated for a day, but if you do not have the time, you can start baking after twelve hours. During the whole period of impregnation, periodically turn the carcase to the other side.

When baking the duck in the oven, we necessarily dip it from the moisture of the marinade with napkins. The process of cooking in the oven is identical to that described in the previous recipe, except that after removing the foil in this case, the duck will need to be watered with the remaining marinade.
