- 500 g of boiled chicken meat;
- 1 carrot;
- 100 g of broccoli;
- 10 grams of chopped fresh dill or 1 tbsp. l. dry dill;
- 1/4 cup freshly squeezed lemon juice;
- 1 chopped onion.
In a large saucepan, heat oil over medium heat. Add parsnip, celery, turnip, bell pepper, garlic, salt and cayenne pepper. Stir them for about 15 minutes. Now add the prepared broth and boiled chicken, carrots, broccoli, onions, lemon juice and dill. Bring to a boil and, reducing the fire, cook for another 5 minutes. After that, dietary chicken soup can be served to the table, decorating with a sprig of parsley.
How to cook mushroom diet soup?
Mushroom dietary soup can be prepared from one type of mushroom, and you can combine several varieties. Fungi contain a large amount of vitamins and minerals, especially selenium, which is necessary to prevent diseases such as colon cancer.
Ingredients:
- 500 g of mushrooms;
- 4 tbsp. l. oil;
- 4 shredded shallots;
- 2 tsp. nutmeg;
- 1 tsp. fresh thyme leaves;
- 1/2 tsp. pepper;
- 1 tsp. salts;
- 1/4 cup of flour;
- 150 g of dry white wine;
- 1 liter of chicken broth;
- 1 cup of milk.

- 500 g fresh pumpkin;
- 400 grams of sliced carrots;
- 200 grams of sliced celery;
- 150 g of chopped onion;
- 1 chopped bell pepper;
- 150 g of pre-cooked mashed potatoes or potato flakes (used to make soup thicker, if necessary);
- 1 tsp. cumin;
- 1 tsp. ground coriander;
- 1/4 tsp. turmeric;
- 1/4 tsp. nutmeg;
- 1/4 tsp. ground ginger;
- 1/2 tsp. cinnamon;
- 2-3 tbsp. l. Sahara;
- 1/2 tsp. salts;
- 3 tbsp. l. olive oil;
- toasted sunflower seeds for garnish;
- croutons for garnish;
- 1 liter of water or broth.
Cut the pumpkin in half, remove the seeds, wrap with aluminum foil and put on a baking sheet. Bake in a preheated oven for 400 minutes for 45 minutes. After the pumpkin is baked, remove the pulp with a spoon.
In a saucepan placed on medium heat, add olive oil, onions, carrots, celery and sage and fry for 5 minutes. Then add 3 cups of water (or 3 cups of broth) and cook for 15 minutes over medium heat.
For the next step, you'll need a blender or food processor: cut the cooked vegetables and baked pumpkin until smooth, then add the resulting mashed potatoes to the pan, pour in 2 cups of water or broth and cook over medium heat. At this point, you can add mashed potatoes or potato flakes, if you want the soup to be more dense. Season the soup with cumin, coriander, cinnamon, turmeric, ginger, nutmeg, sugar, salt and cook for 10 minutes. Serve on the table, decorated with toasted croutons, sunflower seeds or pumpkin.
