Ingredients:
For the test:
- flour - 500-600 g;
- milk - 250 ml;
- eggs - 2 pieces;
- Butter - 110 g;
- Yeast pressed or dried - 35 or 10 g respectively;
- granulated sugar - 110 g;
- salt - a pinch;
- vanilla sugar - 10 g;
- vegetable oil - 20 ml;
For filling:
- cottage cheese - 600 g;
- sour cream - 60 g;
- egg yolks - 2 pieces;
- Butter - 40 g;
- granulated sugar - 150 g;
- corn starch (if necessary) - 30 g;
- vanilla sugar - 10 g;
To lubricate the top:
- egg yolk - 1 piece;
- milk - 20 ml.
Preparation
Undoubtedly, the most important moment in the preparation of cheesecakes, like any other baking - this is the preparation of the dough. And on how much the recipe will be successful depends the result and taste of the finished products. So we will react to this very responsibly.
Milk warmed slightly to a temperature of 37-40 degrees and dissolve in it yeast, twenty-five grams of granulated sugar and eighty-one hundred grams of flour. Put the mixture in a warm place and give time to activate the yeast. On average, it takes twenty-five to thirty minutes.
In the meantime, mix in a large bowl slightly whipped with the rest of the sugar eggs, soft butter and vanilla sugar, pour on the readiness of the spoon and mix well. Now sift small amounts of wheat flour and stir with a spoon in one direction, as long as possible, and then spread the dough on a smooth flour-padded surface and knead it well, lubricating the hands with vegetable oil and, if necessary, pouring more flour. As a result, you should get a soft and non-sticky dough. We return it to a bowl and put it in warmth. Ideal option will be placing the dough for cheesecakes with curd in a slightly heated oven.
When the mass increases in volume at least twice, we knead it with our hands and let it rise again.
While the dough ripens, we prepare the filling for cheesecakes with cottage cheese. We rub through a strainer cottage cheese, we add sugar, yolks, vanilla sugar, soft butter and sour cream and stir well. If the cottage cheese mixture is too liquid and flowing, you can add a little starch or flour to it and mix again. At this stage, you can also add the steamed and dried raisins if desired.
From the ready dough we roll balls, then we form cakes from it and give a little to approach. Then with the help of a glass we make a groove in the center, fill it with curd filling and place cheesecakes on a baking tray some distance from each other. Let the products be separated within twenty minutes, grease the top with a mixture of yolk and milk and determine in a preheated oven for 180 degrees for twenty-five minutes or until the desired color.
